Chipotle Lime Goat Cheese Dip

 Yield 1 cup.

1 cup Chevre (Spreadable Goat Cheese Curd)
1 canned chipotle chili in adobo, minced
2 teaspoons fresh lime juice
Salt and pepper to taste

Preparation:

Combine all ingredients in a bowl.  Add salt and pepper to taste.  Cover and chill four to six hours to blend flavors.

Serve dip with quesadillas or shrimp.
